Weekend Snaps.

Just thought it would be fun to share some snaps with you that I took the other weekend from my girls night in pamper evening and then Sunday brunch with the Mr. Just something simple to ease us into the new week.

I love hosting; dinner parties, games nights, cocktail nights and recently I organised a girls night in pamper session as a very belated birthday celebration.

I woke up to the smell of coffee, bacon and beer?!

The Mr was cooking up something a little bit different Hiver Honey Beer Pancakes. The recipe for this was on the side of the packaging and with a little bit of tweaking it’s dairy free!

We took the original recipe and mainly due to lack of ingredients and the Mr not being able to follow recipes exactly we made ours using this method but you can find the original recipe here.

You will need

-125g sieved plain flour

-3 tablespoons sugar

– 1⁄2 tsp. salt

-1 egg – beaten

-250ml Hiver Honey beer

-30g of Bertolli Spread (or butter if you prefer)

-Rice Bran Oil for cooking 

Pancakes are simple; pop all the ingredients  in a bowl and whisk together until thoroughly blended. It will be a slightly different consistency to normal pancake batter and there may be some bubbles.

Heat your frying pan over medium heat and then coat lightly with Rice Bran oil. For each pancake, spoon about 4 tablespoons of batter into the pan and proceeded in normal pancake fashion. When bubbles appear on the top of the pancake, flip – or sensibly turn and cook until browned.

We smothered ours in maple syrup and bacon but the honey beer taste still buzzed through.

Perfect as a little hair of the dog or just something a little bit different!
