Staying in is the new going out right? And when staying in the only thing to do is a get a takeaway, or make one.
K came over the other night and we cooked up this delicious gluten free Sesame Chicken with Fried Rice, its healthier than your average take away and super easy to make.
For two very hungry people or three slightly normal humans you will need:
For the chicken:
– 2 Chicken Breasts cut into strips
– 1 Tablespoon of Lemon Juice
– 2 Tablespoons of Gluten Free Soy Sauce
– 1 Tablespoon of Sesame Oil
– 1/4 Cup of Ketchup
– 1/4 Teaspoon of Ground Ginger
– 1 Teaspoon of Brown Sugar
– 2 Tablespoons of Sesame Seeds.
For the Rice:
– 1 Tablespoon of Vegtable Oil
– 1&1/4 Cups of Cooked White Rice
– 10 oz of Frozen Peas Thawed
– 3 Spring Onions
– 2 Tablespoons of Gluten Free Soy Sauce
– 1/4 Cup of Chicken Stock
Pre-heat the grill to a medium heat before adding all you chicken ingredients into a large bowl – minus the chicken and sesame seeds.
Mix them all together and then coat each chicken strip before lying them on a pre-foiled baking tray and pop under the grill for 15 minutes, turning occasionally.
Whilst the chicken is cooking to to focus on the rice. Add rice to a hot oiled pan and if you want to pop a little bit of sesame oil over the top to add a little more flavour. Stir fry for around 3 minutes, depending on the heat of your pan.
Add the peas and the spring onions and cook for a further 2-3 minutes before adding the rest of the ingredients and leaving to cook. Until your chicken is finished doing its thing under the grill.
Take the chicken out from under the grill and sprinkle with sesame seeds.
Create a bed of rice for your chicken and then dig in.
Quick simple and much healthier than ordering in.
