Because Easter weekend calls for baking.
Relatives coming over and you haven’t got a pudding sorted, or you’ve got hot cross buns coming out of your ears; don’t fret I have the perfect Easter pudding recipe for you.
Hot Cross Bun and Butter Pudding.
To Serve Four
– 150ml Double Cream
– 300ml Milk
– 2 Eggs
– 50g Golden Caster Sugar
– 3/4 tsp Vanilla Essence
– 4 Hot Cross Buns – make your own if you fancy
– 1 1/2 tbsp chunky marmalade
– Butter for spreading
– Icing Sugar for dusting
Look at those yolks!
Pre-heat oven to 170C gas. Warm the cream and milk in a pan on a low heat and combine vanilla, sugar,eggs in a bowl.
Then add the cream/milk to the bowl and mix together.
Take your hot cross buns and halve them.
Then spread lashings of butter – or low calorie spread if you prefer.
Arrange in an oven proof dish butter side down.
Smother the tops with marmalade.
Pour the cream mixture over the buns and then leave to soak for 15 minutes.
Bake in the oven for 50 minutes and either serve then and there with a dusting of icing sugar or save it for the next day and warm it in the oven.
