Don’t worry I haven’t suddenly turned into a cooking blog but I did want to share with you a gluten free cake that I have been loving to bake recently. It’s a flourless chocolate cake so perfect for any gluten intolerant people and its so simple to make.
You will need
– 100g dark chocolate
– 3 eggs
– 1/2 teaspoon of vanilla extract
– 42g Lurpak
-50g Caster Sugar
First measure out all your ingredients and pre-heat the oven to 150 C – its a lot lower than when normally baking but you have to cook this for longer due to the lack of flour!
Separate the eggs into yolks and whites, leave the yolks to one side for the moment.
Take the egg whites and whip them up into stiff peaks – if you have an electric whisk USE IT! My arm ached after doing it by hand!
Melt the Lurpak and the chocolate together either in the microwave or the old school way over a pan of boiling hot water!
Combine the melted chocolate with the egg yolks.
Then slowly add the egg whites until you are left with more of a batter than a cake mix.
Add the vanilla essence to make sure there is a bit of sweetness mixed in with dark chocolate.
Pour the cake batter into a tin and pop in the oven for 50 minutes!
It’s a cake but not as you know it! What I love the most about this is that it’s gluten free but it’s also pretty low in fat seeing as I didn’t use actual butter!
